Preheat oven to 400°.
Drizzle a bit of olive oil into a baking dish. Add tomatoes, red onions, mushrooms, Fresno pepper, and garlic.
Place a block of feta in the middle.
Add another drizzle of olive oil.
Season with a sprinkling of dried oregano, umami seasoning, red pepper flakes, salt, and pepper to taste.
Add a bit of honey.
Roast for 40 mins.
A little bit before the tomatoes and feta are done, cook your pasta of choice to al dente, reserving 1 cup of pasta water.
Take the baking dish out and mix well, smashing the feta and garlic. Add pasta and basil (and if necessary, the pasta water). Toss so that everything is well incorporated.
Sprinkle bread crumbs and grated parmesan on top of the dish and broil for 10 minutes.
Plate the pasta and garnish with basil and another dusting of parmesan.
