Microwave Matcha Mochi Mug Cake
I have no clue how I came across this matcha mochi mug cake recipe, but I’m glad I found it. I certainly wasn’t searching for it, cause it never occurred to me to make a mochi mug cake. Even though I have heard of mug cakes, I have never actually attempted one before. While I might be a dessert person, I’m generally not too big on cakes. But I do love mochi and I love recipes that are simple and quick, so of course, I had to give this a try. And serendipitously, I had all the ingredients in my pantry. Although I realize not every pantry is well equipped with matcha powder and/or sweet rice flour, so you might have to order those.
I did deviate a bit from the written recipe by adding a touch of honey to the mixture before microwaving it. And I added a dusting of powdered sugar as well as garnishing it with mint and blueberries. Also, I made them in ramekins instead of mugs, but I do love the alliteration of microwave matcha mochi mug cake.
