Erewhon Coconut Cloud Smoothie
A seventeen dollar smoothie? In this economy?!
All jokes aside, the Erewhon coconut cloud smoothie is great. But if you don’t live near one or if you want to be more economical, you can easily recreate this at home. Blue spirulina might be a little hard to find. However, the other ingredients are common pantry staples, especially if you whip up a lot of smoothies.
Also, Erewhon uses almond milk, specifically Malk, but I substituted it with oat milk since that was what I had. I also didn’t use any stevia since one, I don’t have it and two, I thought that it was sweet enough. And lastly, I only had unflavored collagen peptides on hand, so I used that in lieu of the vanilla one.
If you make it, don’t forget to let me know what you think!
